North Sea for Flatfish

I am going to be in Hvidesande (Dk) from next Saturday on for two weeks. My intention is to take conventional tackle for my seven year old daughter for some beach action and a 7 weight for me to try for flatfish in the North Sea. No big deal just the rod, some tippet material, a couple of flies (clouser deep minnows, small crab flies and a crazy charlie or a gotcha in case I find time to do some tying this week) . Wet wading until it is time to look for the scotch bottle in the house.
Has anyone tried this before? Any hints, flies?
